On the terroir of Meursault, some parcels classified as village appellation are located on a marly soil identical to the Grand Cru Corton-Charlemagne (only the topography and altitude change). These plots are of very high quality and deserve to be vinified separately. This is the case for the wines from the terroir of Les Clous, whose name, at first glance, may not be very flattering, but in reality, it comes from the distortion of the word "Clos". Domaine Bouchard Père & Fils has 8.64 hectares on this terroir, nearly half of the total surface area.
TASTING NOTE: Intense bouquet of fruits and flowers combined with a mineral touch. A rich and subtle wine, whose springiness gives it perfect balance. Good ageing potential.
WINE AND FOOD AGINGS : Fish in sauce.
SERVICE TEMPERATURE: Between 12°C and 14°C.
GUARDIAN POTENTIAL: 5 years and over
SALES: manual, in small boxes of 13 kg. Careful manual sorting of each bunch.
VINIFICATION : The pressing process is in two phases: first juice is removed, then the juice is pressed. pressing in two-hour cycles.
MATURING: 8 to 10 months in French oak barrels, with up to 10% new barrels depending on the vintage, then 2 to 3 months in stainless steel vats.
AGEING : This wine benefits from the optimal ambient conditions of the cellars of the Bastions of the old Château de Beaune.
