Vine management: Enhancing the rows of treatments, working the soil, partial weeding, reasoned control, leaf thinning, manual harvesting.
Vinification : Severe sorting in the vatting house, whole berries are destemmed by gravity using harvest bins. Enzyming, yeasting, cold pre-fermentation maceration for a week, daily punching down of the cap, final hot maceration. Vatting period of 3 weeks. Manual devatting using gravity tanks in the pneumatic stainless steel press.
Ageing: 12 months in oak barrels, 1/3 of which are new, malolactic fermentation in barrels, then blending in stainless steel vats for 3 months. Light filtration 5 microns before bottling.
Bottling : At the Domaine, great antique tradition bottle, cork stopper.
Tasting : Sustained, intense colour, the aromas are powerful and complex, they mix cherry and blackcurrant in their youth, then as they age, notes of furs, truffle and spices. The harmonious roundness of the tannins surprises by its capacity to assert its personality with ageing.
Food & wine pairing: Marinated or roasted game, red meats, medium-flavoured cheeses, slightly spicy food.
