Soil: Very stony light brown soils, white oolite scree.
Location : Plot on a 15% slope, facing East-South-East south of Nuits-Saint-Georges. Alt: 275 m.
Average yield over 5 years: 45 hl/Ha
Number of bottles: 4500 Blles
Vine management: Working the soil, partial weeding, grassing of the treatment rows, reasoned control, leaf thinning, manual harvesting, sorting in the vineyard before harvesting (Verjus, damaged grapes).
Vinification: Severe sorting in the vatting house, whole berries destemmed by gravity; Enzyming, yeasting, cold pre-fermentation maceration for one week, daily punching down, final hot maceration. Vatting for 3 weeks. Manual devatting using gravity tanks in the stainless steel pneumatic press.
Ageing: 12 months in barrels, 1/3 of which are new, malolactic fermentation in barrels, then blending in stainless steel vats for 3 months. Light filtration 5 microns before bottling to improve the wine's brilliance and aromatic purity.
Bottling : At the Domaine, bottles of great antique tradition, cork stopper.
Tasting : Dense and sustained robe, the freshness and intensity of its fruitiness charms us from its youth. As the years go by, the mouth displays an ample and silky roundness. A fruitiness evolving towards macerated cherry, stone, liquorice and fine balsamic scents as well as very fine animal nuances.
Food & wine pairing: Red meat, game, stews or cheeses (such as époisses, chaource).
Serving temperature: 15 to 16 °C
