GEOGRAPHICAL SITUATION: Plot on a 15% slope, facing EAST-SOUTH EAST south of Nuits Alt: 275 m

Vine management: Working the soil, partial weeding, reasoned control, leaf thinning, manual harvesting.
Vinification : Severe sorting in the vat room, pressing of the unstalked grapes with a pneumatic stainless steel press. Enzyming, cooling of the must, sulphiting, settling of the must. Fermentation is carried out directly in the barrels with daily stirring during the whole of the F A, or even longer if the vintage requires it.
Ageing: 10 months in oak barrels, 1/3 of which are new, then blended in vats for 1 month, fining, filtration.
Bottling : On the estate, special exclusive bottle, technical cork. Diam. 10
Tasting : Beautiful golden yellow colour sometimes with green reflections. Expressive nose where freshness is combined with power. Notes of honey, lemongrass, menthol, fine vegetal nuances. Volume and richness on the attack in the mouth. As it ages, notes of almonds and hazelnuts appear.
Food & wine pairing: Fine fish, shellfish, foie gras, poultry and white meat in cream sauce. Strong flavoured cheeses (blue, epoisses)
