- The 2021 wine year proved demanding right up to the last minute.Between 5 and 9 April, violent frosts severely reduced yields, delaying the awakening of the vines.The cool, rainy months of April and May didn't make things any easier.Throughout the season, right up to the harvest which began on 20 September, sudden changes in the weather required constant vigilance and a great deal of responsiveness.
- Fortunately, June brought a lull in the weather that allowed the grapes to flower without incident, while the veraison benefited from favourable conditions from mid-August onwards.
Tasting
Profile: A delicately perfumed, persistent wine with a fleshy, mineral palate that elegantly reflects its terroir.
Food & wine pairing: Ideal with cabbage stuffed with foie gras, endives à la bressane or Chaource cheese.
