Domaine du Pas de l'Escalette: Organic and Biodynamic Altitude Wines

Domaine du Pas de l'Escalette, situated at an altitude of 350 metres at the foot of the Larzac plateau, is a key player in the Languedoc region. This family estate, run by Julien and Delphine Zernott, covers some twenty hectares spread over fifty terraces, offering a diversity of terroirs conducive to the production of exceptional wines.

A unique and preserved terroir

The vineyards are planted on limestone scree surrounded by low dry-stone walls known as “clapas”. This configuration, combined with a cool climate and deep, draining clay-limestone soils, gives the wines their characteristic freshness and fruity tension.

Commitment to Organic and Biodynamic Farming

Since 2012, the estate has been certified organic and biodynamic with the Biodyvin label. This approach aims to respect the environment and produce grapes in balance with their natural environment, without the use of synthetic chemicals.

Authentic, refined wines

The domaine offers a varied range of wines, made exclusively from southern grape varieties: grenache, carignan, syrah and cinsault for the reds, carignan blanc, terret bourret, grenache blanc and gris for the whites. Each cuvée reflects the unique character of its high-altitude terroir.

Domaine du Pas de l'Escalette cuvées

Les Clapas Blanc: A blend of carignan blanc, terret bourret, grenache blanc and gris, this gastronomic white wine combines the southern character with the minerality and freshness of l'Escalette.
Le Grand Pas: Dominated by Grenache, this wine symbolizes the estate's Languedoc adventure, offering a full-bodied mouthfeel and aromatic finesse derived from its high-altitude terroir.
Les Clapas Rouge: A blend of Syrah, Carignan and Grenache, this wine is distinguished by its minerality and sapidity, produced from whole bunches of Syrah.

An environmentally-friendly approach

The domaine favors environmentally-friendly practices, such as sexual confusion to combat pests and working the soil to encourage biodiversity. The grapes are harvested by hand, guaranteeing rigorous selection.
