The Domaine PAUL PILLOT is at the origin of a winemaking family in Burgundy. The winemaking is for 70 % in white wines and 30 % in red wines, with a marketing of about 70 000 bottles per year, spread over France and for export. A passion for the land and wine for generations. It was in 1968 that Paul Pillot took over his father Henri's estate. He was then joined by his children, Thierry and Chrystelle, who are now involved in the future of the estate.
Domaine Pillot was founded in 1900 by Jean-Baptiste Pillot, a cooper, who decided to devote himself full-time to his vines. His sons, Alphonse and Henri, succeeded him after the end of the First World War, considerably increasing the size of the estate and starting to bottle their own wines. Henri's son, Paul, took over the estate in 1968 and acquired the prestigious vineyards of Chassagne-Montrachet 1er Cru du Clos Saint Jean, of Les Grandes Ruchottes, of Les Caillerets and of La Grande Montagne, as well as the 1er Cru of Saint-Aubin des Charmois .
Today, the estate owns 13 hectares of vines (4.5 in red) and is managed by Paul's dynamic son, Thierry, that started working in 1999, before taking it full time in 2004. Thierry is in the 4th generation to take the reins of this property. Since the arrival of Thierry, the emphasis has been put on the vines, with a discreet use of new wood and a non-interventionist approach in the cellar. The result is wines of finesse and purity on the palate that perfectly reflect the best terroirs of Chassagne-Montrachet.
