A family estate in the heart of the Bouzy Grand Cru

The Paillard family has been cultivating vines in Bouzy for eight generations. Today, Antoine and Quentin Paillard perpetuate this heritage, cultivating an 11-hectare vineyard exclusively classified as a Grand Cru. Located on the sunny slopes of Bouzy, this prestigious terroir is particularly renowned for the power and richness of its Pinot Noirs, as well as the finesse of its Chardonnays, which the Paillards have always been able to magnify with precision.

 

A winemaker-harvester philosophy

Pierre Paillard is not a large wine merchant. It's an independent winegrower-grower, growing, harvesting and vinifying its own grapes. No outside grape purchases, no compromises on quality. The work is done on a parcel-by-parcel basis, with sustainable viticulture that respects the environment, and a genuine commitment to soil life and biodiversity.

 

In the cellar, vinification is meticulous, often carried out in barrels or stainless steel vats, depending on the desired profile. Malolactic fermentation is generally blocked to preserve the wines' natural tension. Aging on laths is long, sometimes well beyond the minimum requirements. Each cuvée perfectly expresses the chalky minerality of the Bouzy terroir, combined with a beautiful aromatic complexity.

Pierre Paillard's style is characterized by purity, freshness and verticality. Here, the dosage is controlled, often Extra-Brut or even Brut Nature, to let the terroir express itself unvarnished.
