The Les Parcelles cuvée precisely embodies the essence of the Bouzy terroir, as interpreted by the Paillard brothers. It reveals a subtle balance between the power of south-facing Pinot Noirs, in the heart of the Montagne de Reims, and the delicacy of the region's typical chalky soils.
Primarily from the 2021 harvest, enriched with 20% reserve wines, this cuvée is composed of 80% Pinot Noir and 20% Chardonnay.
After aging for 10 months in barrels, the wine rests on its lees for three years before disgorging.
Dosage: 2 g/l.
