Beaune 1er Cru 2018 Clos de la Mousse - Bouchard Père et Fils
The oldest trace of the Clos de la Mousse dates back to 1220, when it was bequeathed to the chapter of Notre-Dame de Beaune by Canon Edme de Saudon. During the Revolution, this beautiful vineyard was parcelled out. In the 19th century, the Bouchard family made various acquisitions in this delicate vineyard in order to obtain its exclusivity. The 3.36 hectares of this Clos were entirely brought together on April 13, 1872 with the acquisition of a last parcel of "20 ares 28 centiares". Since that date, the Maison Bouchard Père & fils has remained a monopoly of the estate. Today, one can still admire its surrounding wall.
TASTING NOTE: Bouquet with aromas of fruit mixed with light toasty notes. Fleshy and delicate at the same time, the Clos de la Mousse reveals itself with refinement. Good ageing potential.
WINE AND FOOD AGING PARTNERSHIPS : White meat, grilled poultry.
SERVICE TEMPERATURE: Between 17°C and 18°C.
GUARDIAN POTENTIAL: 7 to 10 years and over
SALES: manual, in small boxes of 13 kg. Careful manual sorting of each bunch.
VINIFICATION : After total or partial destemming depending on the vintage, fermentation in small containers and gentle pressing ensure optimal vinification. Depending on the profile of the vintage, vatting can last from 15 to 20 days.
AGEING: 12 to 14 months in French oak barrels, with 30 to 40% new barrels.
AGEING : The cellars of the Bastions of the old Château de Beaune offer natural environmental conditions perfectly adapted to the ageing of the Premiers Crus.
