THE ESTATE TELLS YOU ABOUT IT
VINEYARD AND TERROIR:
This parcel of 1.51 hectares is located in the south of the appellation. The vines are on average about 50 years old and are the result of a massal selection. It is regularly planted. The soil is clay and limestone, rich in iron oxide (red earth). The average yield is 35-40hl/hectare.
VINIFICATION:
We harvest by hand. The grapes are sorted, de-stemmed and not crushed. The grapes are then vatted by gravity in stainless steel tanks. Fermentation is done with indigenous yeasts, in closed tanks, with moderate punching down and pumping over. The vatting period is long depending on the vintage (18 to 25 days).
AGEING AND BOTTLING:
The wine is aged in barrels in cold cellars. We use 20 to 25% new wood, exclusively from 500 litre barrels. We then rack by gravity, one month before bottling. We do not filter.
