- Pruning: Double Guyot Age of the vines: More than 50 years
- Vinification: After pressing, the must (juice) is taken to a stainless steel tank for settling*. This is a natural settling by gravity (no enzyme is added). It lasts between 12 and 24 hours. Then comes the alcoholic fermentation* and the malolactic fermentation* which are carried out with temperature control. The wine is aged for 6 to 12 months in stainless steel vats, 20% of which are in oak barrels.
- Characteristics: Its nose and mouth are charmed by its aromas of honey and white flowers. Great persistence and length in the mouth.
- Aging potential: 5-15 years depending on the storage place.
- Temperature: Between 12˚C and 13˚C.
- Pairing: Fish dishes: Blanquette of Monkfish. Meat in sauce: Rabbit.
