On the palate, it is full-bodied and richly textured, with plenty of flesh and breadth. It is still in its prime and has considerable potential for interesting culinary adornments, though with its weight and maturity, it is far from the stereotypical Chablis."
Pairings: A delight with strong fish such as red mullet, salmon, even smoked salmon, but also grilled, stewed or Armorican-style lobster. It also stands up to iodized sea urchins and the strongest cheeses such as Epoisses, Soumaintrain, Langres, Maroilles.
