Tasted by William Kelley in 2020: "The 2018 Chablis Grand Cru Valmur is one of the most powerful and muscular wines in the lineup, delivering notes of pear, citrus oil, oyster shell, beeswax and white flowers. Full-bodied, deep and layered, with a textured attack, racy acids and a long, mineral finish, it should prove to be one of the most enduring wines in Fèvre's portfolio this year." (The Wine Advocate)
HARVESTING : manual.
VINIFICATION : Use of the principle of gravity to avoid any pumping which could be prejudicial to the quality of the wine. Short pneumatic pressing (1h30 to 2h00) for a delicate separation between the solid and liquid parts of the grapes. Very light static settling in order to keep enough fine lees for the alcoholic and malolactic fermentations to take place naturally. The musts are put in French oak barrels (on average 6 years old) for 60 to 70% of the cuvée. The balance is vinified in small stainless steel vats.
AGEING : 14 to 15 months, including 5 to 6 months on fine lees in French oak barrels for 60 to 70% of the cuvée. The ageing is finished in small stainless steel tanks.

THE VINEYARD: The terroir of this Grand Cru is divided into two parts, to the right and to the left of the chemin de la fontaine Sainte Vaubourg on shallow clay-limestone soils. Its shape evokes that of a small valley hence the name Valmur.
