Vintage 2018: Very balanced, fragrant, with a nose dominated by fresh yellow fruit and brioche bread, all in the mouth. (Guide Dussert-Gerber).
Soil : Limestone marl (Kimmeridgian)

Age of the vines : 25 years
Vinification : After pressing, the must (juice) is taken to a stainless steel tank for settling. This is a natural settling by gravity (no enzyme is added). It lasts between 12 and 24 hours. Then comes the alcoholic fermentation and the malolactic fermentation* which are done with temperature control. Maturing lasts between 8 and 12 months in vats, 30% of which is in barrels for 12 months.
Characteristics: Smooth, with aromas of honey and ripe fruit. Its flavours are ample, long and their aromas intense.
Ageing potential: 5-15 years depending on storage location.
Temperature: Between 12˚C and 13˚C
Pairing: Fish-based dish in sauce: pan-fried scallops with balsamic.
Meat dish: Veal escalope with cream sauce.
Cheese: Epoisses.
