AGE OF VINE

GEOLOGY
The vines are located in the commune of Chassagne-Montrachet, at the foot of Montrachet, in a small basin. Brown soil formed on the oolitic limestones of the Callovian pearly slab. Pruning is done in Guyot (Poussard) with various green works (disbudding, trellising, pollarding).
VINIFICATION
Manual harvesting, sorting on the vines and then in the winery and finally pressing (pneumatic press) to obtain a slow extraction.
BREEDING
Racking after a light settling. The grape must is placed in 228 liter French oak barrels (15% new barrels) in which the alcoholic and malolactic fermentations will take place with indigenous yeasts and bacteria. The wine will be aged on fine lees for 18 months. No battonage. One month before bottling, the wine from the different barrels is placed in a stainless steel tank for blending. Then follows a light fining and filtration before bottling. The bottling is done according to the lunar calendar.
TASTING
A complex, harmonious and soaring nose: white flowers, fresh herbs, white fruits, yellow fruits, acacia honey, fine pastry, rubbed flint, whipped cream. For a delicate mouth, with volume, tasty fruits, sapidity, minerality and an enormous length.
METS
Lobster, sea bass, turbot, scampi but also veal, morels... Serve at 12° .
