Chassagne-Montrachet La Goujonne 2019 Vieilles Vignes - Hubert Lamy

A family of winegrowers in Saint-Aubin since 1640, Hubert created his estate in 1973 with 9 hectares. A new winery was built in 1980. and expanded in 2002. Olivier, his son joined him in 1998. The Domaine now has 18.5 ha of which 10.8 ha are first growths on the communes of Saint-Aubin, Puligny-Montrachet, Chassagne-Montrachet and Santenay. Winemaker : Olivier LAMY.

Geology: Deep clayey soil. East-South-East exposure. Surface: 1.05 Hectares. Grape variety : Pinot Noir. Ages : planted in 1950 5% slope. Altitude of 220 meters. Planting density: 11,000 plants / ha

Origin: This parcel may have belonged to the gudgeon family or be exploited by them.

Viticulture :Pruning in Guyot and cordon de Royat (to have smaller grapes). Green pruning in the months of May and August. No fertilizer for 10 years but amendments based on organic compost are made. Low yield. High trellising (1.5 meter) for a larger leaf area and to aerate the bunches. The soil is ploughed about 4 times per year. The whole area is treated with low doses of natural products, sulphur or copper or by reasoned control. (treatment with products that respect existing wildlife and are applied only when necessary).

Vinification: Manual harvest in bins or crates. Grapes are sorted and then destemmed at 30% and 70% whole harvest.

Fermentation and maceration for about 20 days. Pigeage and pumping over are done twice a day. No chaptalization. Wines are put in barrels (Vosges and Allier, 20 % new and barrels 1, 2 wines), because the wood must not dominate the wine.

Ageing of the wine : The cellar is cold, hence the very slow evolution of the wines. FML in barrels. Racked in October (the wines are pushed with compressed air so never pumped). The wines are fined with egg. Bottling (by gravity) after 23 months of ageing.

Quantity produced: 600 cases of 12 bottles.

Tasting: Beautiful dark ruby color. Nose of black and fresh fruits. Rich and fat palate with ripe tannins.

Possibility of evolution : To drink between 2024 and 2031.
