A beautiful legend surrounds this appellation: very appreciated by Charlemagne, the Corton was at that time an exclusively red wine. It was only at the end of the emperor's life that the south-facing plots were planted with Chardonnay, to produce a white wine to produce a white wine that does not stain his flowery beard. In 1909, the Maison Bouchard Père & Fils acquired 60% of the climat "Le Corton" (i.e. 6.93 ha), which has a rare which has a rare particularity: it can be planted with pinot noir or chardonnay. Today, Bouchard Père & Fils is the 3rd largest owner of in Corton-Charlemagne.
- TASTING NOTE: Intense bouquet of fruit and toast combined with the mineral notes typical of this appellation. Rich and powerful wine with a strong personality. Very good ageing potential.
- FOOD & WINE Pairings : Fish and shellfish in sauce, foie gras.
- SERVICE TEMPERATURE : Between 12°C and 14°C
- AGEING POTENTIAL : 7 to 10 years and more
- HARVESTING : By hand, in small boxes of 13 kg. Careful manual sorting of each bunch.
- VINIFICATION : The pressing is done in two phases: first the first juices are evacuated, then the pressing is done in two-hour cycles.
- AGEING : 12 to 13 months in French oak barrels, with up to 15% new barrels depending on the vintage.
- AGEING: The cellars of the Bastions of the old Château de Beaune offer ideal environmental conditions. Thanks to a natural hygrometry and constant temperatures, this Grand Cru enjoys from its youngest age an environment perfectly adapted to a serene ageing.
