THE 2018 VINTAGE AT DOMAINE FAIVELEY
2018 is an early vintage. We started harvesting on August 27th in Mercurey. It is a classic vintage that we will be able to appreciate quickly because it is already very pleasant. In Côte de Nuits, our red wines are rich and warm: they are somewhat similar to our 2009s. They are solar wines with a good structure. Fragrant, they offer aromas of ripe black fruits. They are seductive wines with some similarities with the 2017 and 2011 vintages.
CHARACTERISTIC OF THE CUVÉE LES CAZETIERS
The word "Cazetier" can come from "Castel", the plot of land above the castle of Gevrey. It is one of the rare "Têtes de Cuvée" not reclassified as a Grand Cru in the 1930s. Together with the "Lavaux-Saint-Jacques" and the "Clos Saint-Jacques", this climate is considered as one of the 3 best Premiers Crus of Gevrey. The Domaine owns half of the appellation since 2013.

VINIFICATION & MATURING
The grapes are cut and sorted by hand. The proportions of the destemming and the whole harvest vary according to each vintage. A daily pigeage is carried out to extract from the skins of the grapes their colour, tannins and aromas. After 19 days of vatting, the alcoholic fermentation is completed. The free-run wine is run off by gravity while a slow and gentle pressing of the marc allows us to obtain a press wine of great purity. For 16 months, our wines are aged in French oak barrels (of which 40 to 50% are new and 50 to 60% are 2-wine barrels) in our cellars at a natural and constant humidity and temperature. These barrels are selected for the finesse of their grain and their moderate toasting.
TASTING
The robe is deep ruby. The nose is intense and complex: aromas of red fruits mingle with grilled and roasted notes. The palate is full and generous, the substance is firm with very present tannins. This powerful wine has a silky structure and a magnificent persistence.
Serve with: Duck breast with blackcurrant berries, sautéed rabbit with prunes.
