GEOGRAPHICAL SITUATION
Gevrey-Chambertin is located in the north of the Côte de Nuits. It has 26 premier crus and 8 grands crus. Half of the premiers crus surround the grands crus (towards Morey), the other half is in the North towards the combe de Lavaux, with calcareous and clayey soils.
CHARACTERISTICS
The "Estournelles Saint-Jacques" vineyard is located at the beginning of the Combe de Lavaux fault, superbly exposed to the South, above "Lavaux St-Jacques" and against "Clos St Jacques". The combe is an old dejection channel and we can observe similarities between the soils of the first growths such as Lavaux Saint-Jacques and the great growths located on the slope (Chambertin, Mazis Chambertin...).
VINIFICATION AND MATURATION
The harvest is done manually in small boxes in order to preserve the integrity of the fruit. The grapes are then carefully sorted by hand and destemmed. Maceration of the grapes takes place in open wooden or stainless steel vats for 3 to 4 weeks. The vats are pumped over twice a day during the fermentation. The maturation lasts about 18 months in barrels of our cooperage, of which about a third are new.
