GEOGRAPHICAL LOCATION
Gevrey-Chambertin is positioned in the Côte de Nuits region. This renowned village specialises exclusively in the production of red wines, comprising 26 Premiers Crus and 8 Grands Crus.
CHARACTERISTICS
Premier Cru Poissenots is located near the Estournelles Saint-Jacques climat, to the north of the Combe de Lavaux. Its south-facing position and clay-limestone soil give this vineyard distinct characteristics.
VINIFICATION AND AGEING
The harvest is meticulously carried out by hand, using small crates to preserve the integrity of the fruit. The grapes are then carefully sorted by hand and destemmed. The grapes are macerated in open wooden or stainless steel vats over a period of 3 to 4 weeks. During fermentation, the vats are punched down twice a day. The wine is aged for around 18 months in barrels from our own cooperage, around a third of which are new.
