TERROIR
La Mission is a monopoly-owned parcel. The vines were planted in 1961 for the oldest and in 1997 for the youngest.
Total surface area: 1.9240 hectares.
Climate & Soil: East facing on a rocky, limestone terrace just above the Premier Cru "Clos du Roi".
VINIFICATION
The grapes are harvested by hand to ensure quality. Then the harvest is sorted, pressed whole. The juice is settled after pressing for 12 to 24 hours at controlled temperature. Alcoholic and malolactic fermentations are carried out in oak barrels. After fermentation, the maturation is completed after 12 to 14 months.
GASTRONOMY
The Mercurey Premier Cru La Mission - Monopole will go wonderfully well with a scallop risotto, mushrooms, but also with fruity hard cheeses such as Comté or Tomme de fleurs.
GARDE
To be enjoyed now at an ideal temperature of 12-14°C or to be kept between 3 and 8 years.
THE ART OF TASTING
We often forget that it is not enough to have good wines in our cellar, but that we must also know how to serve them. Temperature is an essential element, about 12° for whites and 15° for reds, and without a good tasting glass that will amplify the wine's aromas, you are sure to diminish your pleasure. A good glass gives a large surface of aeration to the wine and a tightening of the neck, which allows the nose to better grasp the richness and complexity of the great wine.
