VINE AND SOIL:
This parcel is 0.25 hectares and is located on the southern plain of Meursault under the "Charme Dessous". The terroir is called "Les Pellands". The soil is clay and sandy. The yield is about 40hl/hectare.
VINIFICATION:
We harvest by hand. The grapes are sorted, not destemmed, not crushed and are then pressed in a pneumatic press. The cycle is long (2h - 2h30) in low pressure and static settling (12h). We sulfite slightly. The fermentation is done in barrels, 20% of which are new, without any stirring.
MATURATION AND BOTTLING:
We rack after 14 months and age our wines in vats for 2 to 3 months. The bottling is done without filtration.
