CHARACTERISTICS OF THE APPELLATION
The vine has been cultivated in Nuits for more than 1000 years. At the end of the 17th century, Louis XIV, who was suffering from digestive problems, was advised by his doctor to drink a glass of Nuits wine every day. In 1892, the village of "Nuits" added to its name that of its best climate: "Les Saint-Georges".

VINIFICATION & MATURATION
The grapes are cut and sorted by hand. The proportions of de-stemming and whole grapes vary according to each vintage. The grapes are punched down daily to extract their colour, tannins and aromas from the skins. After 19 days of vatting, the alcoholic fermentation is completed. The free-run wine is drained off by gravity, while a slow and gentle pressing of the marc produces a press wine of great purity. For 14 months, our wines are matured in French oak barrels (20 to 30% of which are new) in our cellars with a natural and constant hygrometry and temperature. These barrels are selected for the fineness of their grain and their moderate toasting. The end of the maturing process is carried out in vats for 2 months.
