GEOGRAPHICAL SITUATION
The vineyard of Pommard is located between Beaune in the North and Volnay to the south. In the middle of its slope, in the middle of its the middle of its vineyard, it is oriented to the East or to the South/East.
CHARACTERISTICS
The commune of Pommard only produces red wines. There is no Grand Cru. The soil is predominantly clay and limestone.
VINIFICATION AND MATURATION
The harvest is done manually in small boxes in order to preserve the the integrity of the fruit. The grapes are then carefully sorted carefully by hand and then destemmed. The maceration of the grapes takes place in open wooden or stainless steel vats for 3 to 4 weeks. The vats are pumped over twice a day times a day during the fermentation. The ageing lasts 18 months in the barrels of our cooperage of which a third are new. of which are new.
