GEOLOGY
Very chalky, rather poor, with a thin layer of clay. This is the result of the erosion of a small hill above the plot.
VINIFICATION
Hand-picked, sorted on the vines and then in the vat house and finally pressed (pneumatic press) to obtain a slow extraction.
BREEDING
The grapes are left to settle after a light settling. The grape must is placed in 500-litre French oak barrels (10% new barrels) in which the alcoholic and malolactic fermentations take place with indigenous yeasts. The wine is aged for 15 months on fine lees. No batonage. One month before bottling, the wine from the different barrels is placed in a stainless steel tank for blending. Racking before fining and light filtration before bottling. Bottling is done according to the lunar calendar.
TASTING
Bright greenish gold colour. The nose shows aromas of fresh fruit (apple, pear), citrus and white flowers. The barrel ageing gives discreet vanilla notes. Very frank, full, rich in the mouth, full of sap and vigour.
METS
Accompanies very fine charcuterie and fish marinated or cooked in butter.
