GEOGRAPHICAL SITUATION
Savigny les Beaune is a wine-making village par excellence, north of and adjacent to Beaune.
CHARACTERISTICS
Savigny produces red wines (almost 90%) with village and premier cru appellations. This vineyard has an east and north-east exposure and is located between 220 and 360m . The Dominode is a very suitable climate for the cultivation of Pinot Noir, because the soil is deep and made up of a large variety of rocks from the top of the hill.
VINIFICATION AND AGING
The harvest is done manually in small boxes in order to preserve the integrity of the fruit. The grapes are then carefully sorted by hand and destemmed. Maceration of the grapes takes place in open wooden or stainless steel vats for 3 to 4 weeks. The vats are pumped over twice a day during the fermentation. The wine is aged for about 18 months in barrels from our cooperage, of which about a third are new.
