According to tradition, "who doesn't have a vine in Caillerets doesn't know what Volnay is worth". Qualified as a "Tête de Cuvée" in the 1855 classification by Doctor Lavalle, this appellation is a perfect example of finesse, elegance and grace. The 3.76 hectare parcel of this exceptional Premier Cru has a special value for the Maison Bouchard Père & Fils, since it is the first vineyard acquired by the House in 1775. The Carnot family, who owned it, is still mentioned on the bottles: "Ancienne Cuvée Carnot".

TASTING NOTE : Exquisite bouquet with aromas of fruits and spices. Perfect harmony between its structure and elegance. Rich, complex, it expresses itself with voluptuousness. Very good ageing potential.

VINIFICATION : After total or partial destemming depending on the vintage, fermentation in small containers and gentle pressing ensure optimal vinification. Depending on the profile of the vintage, vatting can last from 15 to 20 days.

AGEING: 12 to 14 months in French oak barrels, with 30 to 40% new barrels.

AGEING : The cellars of the Bastions of the old Château de Beaune offer natural environmental conditions perfectly adapted to the ageing of the Premiers Crus.
