Terroir & Location
The plots are located on the prestigious Bois Sénéchaux terroir, renowned for its ancient sandy Miocene soils. This northerly exposure allows the grapes to ripen slowly and progressively, preserving all their aromatic freshness.
Viticulture : Organic wine
Committed to viticulture that respects the living world, we take care of ecosystems as a whole. Our farming practices encourage biodiversity and comply with the specifications of Certipaq and Ecocert for Organic Agriculture, and those of Biodyvin and Demeter for Biodynamic Agriculture.
The grapes are harvested by hand at optimum ripeness, guaranteeing a precise selection of the best grapes. The grapes are then sorted by hand on an automatic vibrating table to ensure that only the highest-quality berries are kept.
Fermentation takes place in small 17 hectoliter foudres and new 5 hectoliter demi-muids from the Stockinger cooperage. The wine is then aged for 6 months in the same containers, ensuring harmonious maturation and the pure expression of terroir.
