Environmentally-friendly viticulture
The estate adopts an environmentally-friendly approach to viticulture. The soils are worked in the traditional way, and the vines come from massal selections. Green harvesting, such as disbudding to balance the load, trellising to aerate the vegetation and trimming after flowering, is meticulously carried out. This prior care naturally guarantees a low yield. In addition, the vines are sorted 2 or 3 weeks before the harvest, and all the estate's plots are harvested by hand.
Meticulous vinification
After table sorting, the grapes are gravity-fed into temperature-controlled vats. Depending on the vintage, around 50% of the grapes are harvested whole. Fermentation takes place using indigenous yeasts, with little mechanical intervention during vatting, favouring infusion. Only the first pressings are retained during pressing. The wine is aged for around 12 months in barrels, 20% of which are new, followed by 6 months in vats. Bottling is carried out with less SO2, and the periods are chosen according to the lunar calendar.
