Respectful approach to viticulture
The estate adopts an environmentally friendly viticulture approach, working the soil since the dawn of time. The vines, from mass selections, benefit from meticulous care, such as disbudding, trellising and pruning, ensuring a low yield. Sorting in the vineyard is carried out before the harvest which is carried out entirely by hand.
Artisanal Winemaking
The grapes, sorted on the table, are transported by gravity into thermoregulated vats, integrating on average 50% of the whole harvest. Fermentations, carried out with indigenous yeasts, favor infusion rather than mechanical interventions. Aging lasts approximately 12 months in barrels, 20% of which are new, followed by 6 months in vats. Bottling is carried out with a reduction in SO2 inputs, and the periods are chosen according to the lunar calendar.
