Finage: An Authentic Exploration of the Marsannay Terroir
Finage, which evokes the territory, is the name chosen for this cuvée coming from various plots of Marsannay. The vines, planted on varied clay-limestone soils, give rise to a complete wine, characterized by dynamic tannins, fruity aromas of raspberry and spicy notes. The consistency and freshness mark the conclusion of this perfect representative of its appellation.
It is recommended to taste this wine within the first 5 years to enjoy its dynamism, although it can also age beyond that. Decanting may be beneficial in the early years, depending on the vintage.
Environmentally Friendly Viticulture
The estate adopts an approach to viticulture that is entirely respectful of the environment, with ancestral tillage of the soil. The vines come from mass selections, and agronomic practices, such as disbudding and trellising, aim to balance the load and promote airy vegetation. These meticulous preparations naturally guarantee modest returns. A selective sorting on the vine is carried out 2 to 3 weeks before the harvest, all done by hand.
Artisanal Winemaking
After sorting on the table, the grapes are delicately poured by gravity into temperature-controlled vats. Depending on the vintage, around 50% of whole harvests are integrated. Fermentations are carried out by native yeasts, with a preference for infusion rather than excessive mechanical intervention during vatting. Aging lasts for approximately 12 months in barrels, followed by 6 months in vats.
Bottling reduces SO2 inputs, and the periods are chosen according to the lunar calendar.
