TASTING
Creamy and hedonistic, with flavours of honeycomb, apricot, brioche, white ginger and creamy yellow apple all layered seamlessly and extended into a long, acacia-tinged finish. Drink now through 2027.
THE VINEYARD
Grape variety: 100 % Viognier. Age of the vines: between 10 and 40 years. Density: 8900 vines/ha. Pruning: Guyot on stakes.
Climate: moderate continental with hot, dry summers and regular rainfall in the other seasons.
Soil: steep granite slopes. Shallow, stony sands on dark granite with biotites or light granite with muscovite.
THE CELLAR
Vinification: whole grapes are poured directly into the press, case by case. Settling at low temperature for 12 to 24 hours, then vinification in 15 hl tuns, demi-muids and stoneware jars, with temperature control. Aging: 12 months. Racking and blending 6 weeks before bottling.
