- Grape variety: 100% Syrah, vines 20 - 30 years old.
- Traditional vinification in crude concrete vats. 28 to 32-day vatting period with punching down of the cap, pressing with a low-pressure vertical press. 12 months ageing on fine lees in 6 and 7-wine barrels and in concrete vats.
- Terroir: clay-limestone terraces in the commune of Beaumont-Monteux. draining soil with detrital pebbles.
- Yield: 40 hectolitres/hectare growing methods
- Label: the vines are cultivated using organic methods certified by ecocert and biodynamic methods certified by biodyvin. Disbudding, lifting, removal of internodes and green harvesting are carried out manually.
- Vinification: harvested and sorted by hand on the vines and on the sorting table / 100% de-stemming / vatting and devatting by gravity traditional vinification in raw concrete vats / vatting time 28-32 days with punching down, pressing with a low-pressure vertical press / ageing for 12 months, 50% in 6 and 7-wine barrels for the younger wines and 50% in raw concrete vats.
