Technical details
- Blend: The wine is made with 50-80% Marsanne and 20-50% Roussanne, depending on the conditions of each vintage.
- Vinification: Traditional, with an 8-month ageing period on the lees, carried out in concrete eggs at a low temperature (around 15°C), which preserves all the freshness of the wine.
- Terroir : The vines are planted on clay-limestone terraces in the commune of Beaumont-Monteux. The soil is well-drained and strewn with detrital pebbles, giving the grapes optimum ripeness.
- Yield: 45 hectolitres per hectare, guaranteeing remarkable aromatic concentration.
- Growing methods: The vines are grown using organic methods (certified by Ecocert) and biodynamic methods (certified by Biodyvin). Rigorous practices are applied every year, including disbudding, pruning, removal of internodes and green harvesting, to ensure a top-quality production.
Vinification
- The grapes are harvested by hand when fully ripe, and sorted directly on the vine. The grapes are 100% destemmed, then gently pressed using a low-pressure pneumatic press. The must is cold settled in stainless steel vats.
- Ageing: The wine is aged for 8 months on its lees, two-thirds in 16 hectolitre ovoid concrete vats and the remaining third in barrels, to develop its full aromatic complexity.
- Packaging: After a light filtration, the wine is carefully bottled.
- Production: Each vintage is limited to around 10,000 bottles, offering a rarity appreciated by connoisseurs.
