SOIL CHARACTERISTICS: Sandy soil.
ASSEMBLY:
80% Grenache - 20% Syrah - Mourvèdre - Cinsault
VINIFICATION :
Manual harvest with sorting in the vineyard and then in the cellar.
De-stemming at 80% and 20% in whole bunches, then fermentation in concrete tanks and stainless steel tanks by indigenous yeasts.
AGEING :
In concrete tanks for 2 months.
TASTING:
This wine has a very pretty red color with Burla and Violine red highlights. The nose has aromas of cherries with cream and black cherry compote from the Pyrenees. The mouth is greedy, easy to drink with an explosion of red fruits, raspberry, strawberry and cherry with licorice, all accompanied by notes of aniseed syrup and white pepper. Nice wine of greediness.
