This wine is produced from the oldest vines on the estate and from the finest terroirs. This rigorous plot selection is a true revelation of the estate's potential.

Terroir : The Fondrèche plateau is made up of ancient alluvial deposits. The soil is very stony (rolled pebbles, flint and crystalline) and chalky from the surface with a sandy clay texture.

Grape varieties: 90% Syrah, 10% Mourvèdre

Vinification & ageing: Traditional, 14 to 21 days vatting time with only a few small punchings of the cap in order to favour a slow and progressive extraction.

Ageing: 12 months on lees in barrels and tuns. Bottled on the fruit day.

Tasting notes: Dark colour with purple tints, a nose of crème de cassis, violets, graphite and light oak. The palate is full-bodied, rich and fleshy with elegant tannins. A complete and racy wine.

Food and wine pairing: Lamb tagine, osso buco, meat in sweet and sour sauce
