DESCRIPTION

The cultivation of Saint Aubin 1er Cru began in 2014. This vine is located in the heart of a Climate, Les Frionnes, classified 1er Cru. This Climat des Frionnes extends over three localities: Les Champs (the northern third), Les Frionnes (the central third) and Les Perrières (the southern third). It is by this name, Les Perrières, that we have chosen to name our wine on the label of our bottles because it seems to us to characterize the stony soil where the rock outcrops as well as the wine marked by the rich minerality from which it is made.

ELABORATION

The grapes are left on the vine for as long as possible so that the bunches reach a natural high quality maturity. Hand-picked, the bunches are then pressed, harvested whole, and the resulting juice is left to settle naturally before being poured into the cellar by gravity. Some new barrels among the one to three year old barrels and ½ muid (500l equivalent). Maturing lasts between 12 and 18 months on lees without stirring. Then after racking and massing the volumes of Saint Aubin, everything is bottled and put to rest for a year before the wine is offered for sale. This explains why our first growths are sold one year apart.

TASTING

Vinified and matured in barrels of one to five wines and half a new vintage for 18 months. The nose offers generous aromas of ripe white and yellow fruits, sweet spices and almond. The palate offers more mineral and refreshing notes between wet stone, citrus peels and even a fine touch of iodine. The balance between the fruit and the salinity of the soil enhances this sensation of acidic freshness on the finish.
