Tasting
Colour: dark garnet.
Nose: jam of very ripe black fruits, smoky and mineral notes.
Palate: smoky and peppery notes. Very tight tannins and very long persistence in the mouth. Depending on the vintage, the wine can be kept from 30 to 60 years, or even from 50 to 75 years.
The sommelier's advice: Parma ham. Fillet of beef with pink pepper. Hare à la royale. Livarot.
Grape variety: Syrah. Selection of our oldest Syrah strains in the cradle of the Saint Joseph appellation.
Harvest : Manual harvest at very high maturity.
Soil: Granitic soils, very poor and very stony.
Vinification: 100% destemmed. Slow fermentation in small volume concrete vats. The maceration is very long and lasts more than a month in order to polymerize the tannins. Only free-run wine is used in this plot selection.
Ageing: 100% in barrels (new barrels and barrels of one or two wines) for 16 to 18 months.
