Tasting by Joe Czerwinski on 20 January 2022: "Jerôme Coursodon was not entirely sure that this barrel and its neighbours would be bottled alone like the 2020 Saint Joseph la Sensonne, but he said there was a strong possibility. Made from old vines, aged entirely in new Taransaud (in this case) and Chassin oak, this has strong toast and mocha notes, but there's also plenty of cherry. Full-bodied, rich and velvety, with extraordinary length and vibrancy on the finish, it seems to be another very successful wine from this family-owned Mauves estate."
GRAPE VARIETIES: Syrah
YIELD: 34 hl / ha. Grapes from all our terroirs.
TERROIR : Very granitic. Shallow soil.
EXPOSURE : South on steep slopes.
QUALITY : All the viticultural work is done manually. No mechanisation possible. Treatment by hand. Plantation density: 8500 vines/ha. Trellising on stakes.
HARVESTING: Manual and transport of the whole harvest in 40 kg containers to the cellars.
VINIFICATION: Sorting on the table at reception. Destemmed harvest. Maceration and fermentation in open vats for 18 days with 2 daily punchings of the cap. If the other cuvées are selections of old vines on particular terroirs, this cuvée reflects all the terroirs of the estate with a slightly different maturation. This wine is aged on lees in 100% new barrels.
FOOD AND WINE Pairings: Woodcock pigeon served with a toast of giblets and foie gras, accompanied by a pan of wild mushrooms.
