Tasted by Joe Czerwinski on 20 January 2022: "A blend of old vines from the Paradis (in Mauves) and Saint-Joseph (in Tournon) vineyards, about half of the 2020 Saint Joseph le Paradis Saint Pierre has been de-stemmed. Tasted in barrel, it displays expressive floral notes and vibrant red fruit aromas. It is silky, rich and long."
VINEYARDS: Syrah
YIELD : 30 hl / ha. Grapes from the oldest vines of the Domaine pruned in gobelet.
SOIL: Very granitic. Shallow soil.
EXPOSURE : South on steep slopes with many cottages
QUALITY : All the vineyard work is done manually. No mechanisation possible. Treatments on the back of a man. Green harvesting at veraison to limit yields. Plantation density: 8500 vines/ha.
HARVESTING: The grapes are harvested manually and a first selective sorting is carried out. The entire harvest is transported in 40 kg containers to our cellars.
VINIFICATION : Sorting on the table at reception. Destemmed harvest. Maceration and fermentation in open vats for 21/25 days with 2-3 daily punchings of the cap. The aim is to achieve a high extraction of tannins and colour. Aged for 15 months in pièces and demi muids.
