Domaine Samuel Billaud has established itself as one of the leading names in Chablis. A talented and passionate winemaker, Samuel Billaud embodies a new generation of winemakers, combining high standards, finesse and respect for terroirs. After a long career with the Billaud-Simon family estate, he set up his own domaine in 2009, with the ambition of producing chiselled cuvées that accurately reflect the identity of each Chablis climate.
Based in Chablis itself, he now cultivates around 8 hectares of his own vineyards, in addition to purchasing grapes from carefully selected winegrowers. Samuel Billaud has rapidly established a pure, precise style, where minerality and balance are the watchwords.
Samuel Billaud's wines are characterized by remarkable freshness, crystalline structure and great elegance. The work in the vineyard is rigorous, with respect for the soil and living organisms. Viticulture is meticulous, yields are controlled and the grapes are harvested at optimum maturity. In the cellar, vinification is slow and non-interventionist, and ageing is adapted to each cuvée, in stainless steel vats or barrels, without excessive woodiness.
This clean, precise style reveals the diversity of Chablis terroirs, from the salivating freshness of the Petits Chablis to the depths of the Grands Crus, via the vineyard's finest Premiers Crus.
