Domaine Samuel Billaud's Chablis 1er Cru Les Vaillons is a must for lovers of great Burgundy whites. Made exclusively from the Chardonnay grape variety, this 1er Cru from the Chablis Premier Cru appellation stands out for its finesse and mineral purity. The plot of Les Vaillons, with its south/southeast exposure, produces grapes of great ripeness, while retaining a beautiful freshness thanks to the limestone soils typical of the Kimmeridgian era. The wine is not only precise, it is also certified organic, a guarantee of respect for the terroir.
On tasting, Les Vaillons is distinguished by a chiselled, taut palate, with subtle aromas of white flowers, preserved lemon and gunflint. The texture is straightforward and saline, with a persistent, refreshing finish. Serve between 10 and 12°C, ideally after light aeration. This 1er Cru goes wonderfully well with seafood, grilled fish or creamed poultry. Its ageing potential is remarkable: it can evolve positively for 8 to 10 years in the cellar, gaining in complexity over time.
