Tasted by J.S in 2023: ‘The nose is dark and fleshy, but very fresh. On aeration, notes of wild blackberry and elderberry develop. Very concentrated and structured, with a dense, dry core that some might find a little intimidating, but which really impresses us. The finish is incredibly concentrated and fresh, with laser-like precision. Iron firmness on the long, powerful finish. From a co-planting of 80% Grenache, 10% Mourvèdre and 10% Counoise on sandy soil. 75% whole bunches. Aged in a combination of Stockinger oak tuns and clay amphorae. Made from Demeter-certified biodynamically grown grapes. Drink from 2026.
When to drink this wine : 2026 - 2040+.
Varieties: 90% Grenache, 9% Mourvèdre, 1% Counoise.
Vinification : Hand picked with a very selective sorting, short and soft maceration. Soft punching-down.
Ageing : In big casks and terracotta jars during 18 months.
Terroir : Brown to light brown limestone from Miocene «safre» (marly sand).
