Tasted by Luis Gutierrez: “In 2023, Tissot had its biggest harvest to date. The wines are fresher and more fluid than in 2022. A glimpse of the Trousseau Singulier 2023 had a lifted, expressive, floral nose with notes of chewing gum. It was a little different, as it had had three weeks of carbonic maceration. They've only produced a handful of carbonic maceration reds and are experimenting a little more. It seems to polish the tannins of the varieties. 2023 is a fresh year for reds, bright and vibrant with tension, like 2016.”

Selections of 5 vines : rosières, Béranger, en muzard, corvées sous Curon and dessus des bruyères on the east side, chevrette. They all come from Bajocian limestone scree covering most of the lias clay. The vines are biodynamic, certified by Ecocert and Demeter. The vines are cultivated without weedkillers, chemical fertilizers or synthetic products. We use sulfur, copper and plant teas to treat the vines. We make our own compost. These vines are completely ploughed. Manual harvesting in crates. Severe sorting, de-stemming, vatting for 1 month in truncated wooden vats with some trapping.
Aging in ½ muit (600 liter barrel) at 10% new for 1 year. Bottling without filtration. Dose of SO² quite low: contribution of 2grs/Hl to the encuvage and contribution of 2 grs to the bottling Very beautiful maturity of fruit, the morello cherry, the cherries in brandy, the spices. Ample mouth with fine and ripe tannins. Very nice compromise between the typicity of the grape variety, the matter and the drinkability.
