The Côtes du Jura Chardonnay en Barberon has had two grams of sulphur added, as the winemaker does not want the reductive character of the wine in the bottle; the wine should express the soil, the clay in this case. It has a smoky side with a touch of citrus. The palate is round, serious, dry and tasty. After nearly two years of barrel ageing, with a small third of new wood, this Chardonnay En Barberon now offers a particularly well-balanced profile between smoky minerality, floral elegance and fruit brightness.
En Barberon is undoubtedly one of the Domaine's flagship terroirs, acquired by André Tissot, on which Stéphane now produces great bottles, in both colours. Exposed east/west, the 40-year-old vines benefit from a soil of clay and Lias marl (quite similar to that found in Château-Chalon), covered in places by a thin layer of limestone scree. Here, Chardonnay occupies about half of the two hectares, leaving the other half to Pinot Noir.
