- Tasting notes: Very fine mousse, very nice complexity, very ripe aromas. This wine is halfway between a traditional crémant and a natural sparkling wine.

- Production: 45 hl/ha
- Vineyard management: Biodynamic vineyard, Ecocert and Demeter control. The vines are cultivated without weedkillers, chemical fertilisers or synthetic products.
- Vine treatment: sulphur, copper and herbal teas. Compost is made and added. These vines are ploughed in their entirety.
- Vinification: Harvested in small crates, pneumatic pressing, fermentation in stainless steel vats for a very long time between 16° and 18° Aged on lees for 3 months, malolactic during this period. In January, bottling of this wine to make the "prise de mousse" (champagnisation): rather than using industrial yeasts, the "pied de cuve" (active yeast) is made with straw wine in fermentation. The re-fermentation in the bottle will thus last 9 months (rather than 2 with industrial yeasts). The indigenous yeasts will then bring much more complexity, smoothness and fatness.
- Aging: on the lees in bottle for 13 months, disgorging without dosage or SO². However, there is still 4grs/litre of sugar from the fermentation in the bottles.
