The Domain : Stéphane Tissot has become the best known face of his region on an international scale. Restraint with sulphur has long been a hallmark of this address, and the growing fashion for low-sulphur wines and Tissot's growing confidence as a winemaker were undoubtedly factors in his decision to stop using sulphur until bottling, and then to use only a few grams, as well as experimenting with some entirely sulphur-free cuvées.
Harvest, vinification and maturation: Pinot grapes harvested at maximum maturity. De-stemmed and macerated for 10 days before adding marc from our Domaine. Aged for one year before bottling at less than 17°C
