- *Passerillé wine: Winegrowers let the grapes over-ripen and harvest them later so that they are more concentrated in sugar (the water in the grapes evaporates thanks to the hot, dry winds in the Jura vineyards).
- Tasting by Luis Gutiérrez: "The 'pseudo' vin de paille (it does not meet the requirements of the category and is therefore not sold or labelled as such) Spirale from the 2018 vintage comes from a vintage in which more sweet wine was produced. It is a blend of Savagnin and Chardonnay with a little Poulsard, which has been dehydrated for four months and pressed very early, resulting in 8% alcohol and notes of quince and baked apples, as well as 300 grams of sugar that are well integrated and balanced thanks to very good acidity."

VINEYARDS
- Exposition: West-facing
- Surface area for this wine: 1st sorting on 1.5ha
- Age of vines: Selection of old vines
- Planting density: 7000 vines/ha
- Vineyard management: Organic and biodynamic, Ecocert and Demeter certified. The vines are grown without weedkillers, chemical fertilisers or synthetic products. We use sulphur, copper and herbal teas to treat the vines.
Harvesting, vinification and ageing :
- Hand-picked in 2 to 2.5 kg wooden crates on a bed of organic straw.
- Racking between 4 and a half and 6 and a half months, pressing then fermentation in barrels for 1 year.
- 8% alcohol. 300g of residual sugar
- Ageing potential: 20 years

What is passerillage*? A term used to describe the process of drying the grapes before making wine. Passerillage, which is generally practised in the south of France, involves exposing the grapes to open-air drying under the sun after harvesting to increase their sugar concentration.
