Tasting by Luis Gutiérrez: "The 2016 Vin Jaune En Spois is the prototype of the Vin Jaune d'Arbois. It is spicy and more concentrated, even though it comes from younger vines. The soils are Trias clay, and the wine has fewer aromas. It's a bigger, more open wine than its siblings.

Vines grown organically, Ecocert controlled. The vines are grown without weedkillers, chemical fertilisers or synthetic products. They use sulphur and copper to treat the vines. All the vines are ploughed. Hand-picked, de-stemmed, pneumatically pressed, spontaneous fermentation in vats, matured in 228-litre barrels without topping up for 6 years, 1/3 of the volume evaporated and the wine protected by the yeast veil. Light filtration before bottling. For all our oxidative wines we use a little sulphur (1 to 3 grs/hl) before fermentation. After oxidative ageing, sulphur is not necessary as it is ineffective (combination of SO2 and aldehydes).
